Peanut Butter 'n' Cocoa Cookies

List of Ingredients
- 1 stick margarine, softened
- 1/2 cup chunky peanut butter
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 egg
- 1/2 teaspoon vanilla extract
- 1/4 cup baking cocoa
- 1 cup all-purpose flour
- Sugar
Instructions
- In large mixing bowl, beat together margarine, peanut butter, and sugar on medium speed. Add in egg; beat until fluffy. Scrape down sides. Beat in baking powder, salt, vanilla and cocoa. Scrape down sides. Beat in flour. Cover dough and chill in refrigerator until easy to handle.
- Shape dough in to 1-inch balls. Roll balls in additional sugar to coat. Place balls 2 inches apart on ungreased cookie sheet. Flatten balls with fork making criss-cross marks. Bake at 375°F for 7 to 9 minutes. Remove cookies from sheets to wire racks to cool.
