Oven Fried Jalapeno Poppers

- 12 fresh jalapeno peppers
- 4 ounces neufchatel cheese, softened
- 1 Tbsp. chopped fresh cilantro
- 1/4 cup honey mustard
- 1 cup cornflakes cereal, crushed
Instructions
- Heat oven to 350ºF. Make a small incision lengthwise on each pepper; remove seeds and ribs; rinse and dry well. Cook peppers in dish covered with plastic wrap in microwave oven on HIGH power 3 minutes. In mixer, beat cheese with 2 tablespoons of water and cilantro until smooth; transfer to a pastry bag fitted with a round tip. Pipe 1 tablepoon mixture into each pepper. Coat peppers with honey mustard; roll in cornflake crumbs. Transfer to baking sheet coated with nonfat nonstick cooking spray, and bake 15 minutes, or until golden.
