    1-cup nonfat chicken broth (low-sodium)
    1 Tbsp. finely minced onion
    1 Tbsp. cornstarch
    1/8 tsp. Freshly ground black pepper
    1/4-cup cold water

    Recipe



    In a medium saucepan, add chicken broth and minced onion. Simmer gently 2-3 minutes. Meanwhile, combine cornstarch and cold water, stirring with a fork until smooth and blended. Add gradually to boiling chicken broth, stirring constantly. Cook and stir over medium heat until thick, smooth, and transparent. Stir in pepper. May be seasoned with additional desired herbs.

    Makes 4 (1/4-cup) servings.
