Leita’s Chicken and Dumplings

This is a big hit in our family.
List of Ingredients
1 whole chicken, cut up
3 Tbsp. Flour
salt and pepper to taste
1 cup skim milk
1/2 cup potato flakes
Egg Dumpling (recipe below)

2 tsp. Salt
1 cup skim milk
2 eggs, beaten
3 cups flour

Egg Dumplings Recipe:
In a mixing bowl, combine salt and milk to beaten eggs and stir into flour to form a smooth batter.
Drop by teaspoon into boiling salted water.
Cover tightly and cook for 15 minutes.
(DO NOT LIFT THE LID DURING THIS TIME)
Drain and add to chicken when needed.

Cooking the Chicken:
Clean and cut chicken up.
Place in pot and nearly cover with water.
Cover and simmer gently for 1 to 2 hours.
Add potato flakes just before you add the dumplings.
About 20 minutes before serving, add dumplings and cook.
Just before serving add salt and pepper and a paste made from the flour and milk.
Cover and cook until ready to eat. It makes a big pot.
Makes about 20 (1 cup) servings.

Note: We freeze the leftovers in gallon size freezer zip-lock bags for later use. This keeps in the freezer up to 3 months. If frozen, let it thaw completely overnight. Then you can heat it up in the microwave.
