Frozen Strawberry Daquiri Mix

Recipe Introduction
Makes about 4 1/2 cups.
List of Ingredients
- 2 cups granulated sugar
- 1/2 cup fresh lime juice (juice from 2 medium limes)
- 1/4 cup water
- 1 quart fresh strawberries, washed and hulled
Instructions
- In a medium bowl, combine sugar, lime juice and water; stir to combine. Let stand until sugar is almost completely dissolved, about 15 minutes. (Mixture will be thick.)
- In a blender or bowl of a food processor, combine the sugar mixture with stawberries, blend until smooth. Pack into half-pint, pint or quart freezer containers; freeze. Or pour the mixture into ice cube trays and freeze until firm; unmold and pack into resealable freezer bags.
- The mixture will be solid, but will have the consistency ofa vry firm sherbet, so you will be able to scoop portions from the main batch, then refreeze the mixture, if desired.
Final Comments
To Prepare Each Strawberry Daquiri:
In blender continer, combine 3 tablespoons light or dark rum, 1/4 cup frozen strawberry daiguiri mix (or 2 cubes) and about 3/4 cup ice cubes (7 or 8 serving sized cubes.) Blend until smooth. (Most blendeer containers can handle up to 4 servings at one time.)
Alternative Serving Suggestions:
The daiquiri mix makes a delicious nonalcoholic coolere when blended with a little bit of soda and ice. Or, for a more creamy "smoothie" blend in a banana, yogurt or vanilla ice cream.
