List of Ingredients
- 1 package active dry yeast
- 1/3 cup warm water (105-115 degrees F)
- 2 3/4 cup plus 1 tablespoon unbleached flour
- 3 tablespoons sugar
- 1 1/2 teaspoon baking powder
- 2 large eggs
- 1/3 cup ice water
- 1/2 cup unsalted butter, melted, at room temperature
Instructions
- Dissolve yeast in warm water and let stand until foamy, about ten minutes.
- In a food processor with metal blade, put flour, sugar, butter, baking powder. Process 10 seconds to mix.
- Add the yeast and eggs, with machine running, pour ice water through tube in steady stream as fast as flour absorbs it.
- Process until dough forms a ball; then let machine run 40 seconds to knead.
- With machine still running, pour butter through feed tube. When last of butter is absorbed, turn off machine.
- Dough should be soft and pliant.
- Put dough in large oiled bowl and cover with oiled plastic wrap. Leave in a warm place to rise, 1-1 1/2 hours.
- Punch downand spoon into oiled 9-cup tube pan. Cover with wrap. Rise until doubled, about one hour.
- Set overn rack on lower level and heat to 375 degrees.
- Bake bread 35-40 minutes.
- Unmold and cool on wire rack.
