    • 1 package active dry yeast
    • 1/3 cup warm water (105-115 degrees F)
    • 2 3/4 cup plus 1 tablespoon unbleached flour
    • 3 tablespoons sugar
    • 1 1/2 teaspoon baking powder
    • 2 large eggs
    • 1/3 cup ice water
    • 1/2 cup unsalted butter, melted, at room temperature


    Instructions


    1. Dissolve yeast in warm water and let stand until foamy, about ten minutes.
    2. In a food processor with metal blade, put flour, sugar, butter, baking powder. Process 10 seconds to mix.
    3. Add the yeast and eggs, with machine running, pour ice water through tube in steady stream as fast as flour absorbs it.
    4. Process until dough forms a ball; then let machine run 40 seconds to knead.
    5. With machine still running, pour butter through feed tube. When last of butter is absorbed, turn off machine.
    6. Dough should be soft and pliant.
    7. Put dough in large oiled bowl and cover with oiled plastic wrap. Leave in a warm place to rise, 1-1 1/2 hours.
    8. Punch downand spoon into oiled 9-cup tube pan. Cover with wrap. Rise until doubled, about one hour.
    9. Set overn rack on lower level and heat to 375 degrees.
    10. Bake bread 35-40 minutes.
    11. Unmold and cool on wire rack.
