List of Ingredients
- 1 1/4 cups all purpose flour
- 1 cup yellow corn meal
- 1/3 cup sugar
- 3 1/2 teaspoons baking powder
- 1 cup, (four ounces) firmly packed, shredded sharp cheddar cheese
- 1 cup milk
- 1 large egg
- 1/4 cup butter/margarine, melted
Instructions
- In a large bowl, mix flour, cornmeal and baking powder.
- Reserve 2 tablespoons of cheese.
- Stir remaining cheese into flour mixture.
- In a small bowl, beat to blend milk, egg and butter; pour into well in flour mixture. Stir until just lightly blended; batter should be lumpy.
- Spoon batter into greased muffin cups. Sprinkle reserved cheese evenly over muffins.
- Bake in 400-degree oven for about 25 minutes. Let cool about five minutes.
