    List of Ingredients


    • 3 cups sifted all purpose flour
    • 1 1/2 cups sugar
    • 1 1/2 teaspoons baking soda
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground cloves
    • 1/2 teaspoon ground allspice
    • 3/4 cup vegetable shortening
    • 1 jar 15 ounces applesauce (1 1/2 cups)
    • 2 eggs
    • 1 teaspoon vanilla
    • 1 cup raisins
    • Lemon Glaze-
    • 1 cup confectioners sugar
    • 1 1/2-2 tablespoons lemon juice


    Instructions


    1. Grease 10 inch tube pan. Dust with flour, tap out excess flour.
    2. Mix flour, sugar, baking soda, and spices in a large bowl; add shortening and applesauce. Beat with electric mixer at medium speed, two minutes.
    3. Add eggs and vanilla, beat at medium speed, one minute.

    4. Stir in raisins and nuts and blend well; our into prepared pan.
    5. Bake in 350-degree oven for 1 hour and ten minutes.
    6. Cool cake in pan on wire rack for 10 minutes, then turn out onto rack; cool completely.
    7. Drizzle lemon glaze over top of cake, allowing to run down the sides of the cake.
    8. Lemon Glaze-
      Blend 1 cup confectioner's sugar with 1 1/2-2 tablespoons lemon juice until smooth. Makes 1/2 cup glaze.
