Apple Spice Cake

List of Ingredients
- 3 cups sifted all purpose flour
- 1 1/2 cups sugar
- 1 1/2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground allspice
- 3/4 cup vegetable shortening
- 1 jar 15 ounces applesauce (1 1/2 cups)
- 2 eggs
- 1 teaspoon vanilla
- 1 cup raisins
- Lemon Glaze-
- 1 cup confectioners sugar
- 1 1/2-2 tablespoons lemon juice
Instructions
- Grease 10 inch tube pan. Dust with flour, tap out excess flour.
- Mix flour, sugar, baking soda, and spices in a large bowl; add shortening and applesauce. Beat with electric mixer at medium speed, two minutes.
- Add eggs and vanilla, beat at medium speed, one minute.
- Stir in raisins and nuts and blend well; our into prepared pan.
- Bake in 350-degree oven for 1 hour and ten minutes.
- Cool cake in pan on wire rack for 10 minutes, then turn out onto rack; cool completely.
- Drizzle lemon glaze over top of cake, allowing to run down the sides of the cake.
- Lemon Glaze-
Blend 1 cup confectioner's sugar with 1 1/2-2 tablespoons lemon juice until smooth. Makes 1/2 cup glaze.
