    Armenian Cake

    Recipe Introduction


    When I was in the second grade, we lived near the zoo in Norfolk, Virginia. One day, while we were visiting the zoo, my mother met an Armenian woman, who shared this recipe with her. It has been a family favorite ever since.


    List of Ingredients


    • 1/2 cup butter or margerine, room temperature
    • 2 cups firmly packed brown sugar
    • 2 cups flour
    • 1 cup sour cream or buttermilk or plain yogurt
    • 1 large egg
    • 1 teaspoon baking soda
    • nutmeg
    • chopped nuts


    Instructions


    1. Completely mix flour and brown sugar. Work in butter with fingers until uniform in texture.

    2. Place half of the dry mixture in the bottom of a 9-inch pan. Smooth the mixture out, but do not press it.

    3. Add to the remaining ingredients 1 tablespoon of nutmeg and 1 teaspoon of baking soda.

    4. Beat egg with sour cream and beat mixture into dry mixture, just until combined.

    5. Spread moist mixture over dry mixture in baking pan.


    6. Sprinkle with additional nutmeg and finely chopped nuts.

    7. Bake at 350 degrees for about 45 minutes.



    Final Comments


    Armenian Cake is delightful, served warm or room temperature. You can serve it with whipped cream flavored with a little additonal nutmeg. Vanilla ice cream goes well with Armenian Cake too. But we like it just the way it is.
