Sister Mabel's Caramel Corn
List of Ingredients
2 cups light brown sugar, firmly packed
1/2 cup light corn syrup
1/2 pound margerine or butter
1/4 teaspoon cream of tartar
1 teaspoon salt
1 teaspoon baking soda
6 quarts freshly popped popcorn
2 cups salted peanuts
Recipe
In 2 1/2 quart saucepan, combine brown sugar, corn syrup, butter, cream of tartar, peanuts, if you are going to add them, and salt.
Heat to boiling, stirring, over medium-high heat. Stirring constantly, boil rapidly to hard-ball state, 260 F degrees, about five minutes.
Remove from heat. Stir in baking soda quickly but thoroughly. Pour at once over popcorn in a large roasting pan. Stir genly until all kernels are coated.
Bake in preheated 200 F degrees oven for one hour, stirring two or three times during baking.
Turn out at once on waxed paper, spread apart and allow to cool completely. Break apart and store in tightly coverd container.
Makes 6 quarts.
