Chocolate Cheesecake

- 1/3 cup butter or margarine, melted
- 1 1/4 cups graham cracker crumbs
- 3 eight-ounce packages cream cheese, softened
- 1 14-ounce can sweetened condensed milk
- 1 12-ounce package chocolate chips
- 4 eggs
- 2 teaspoons vanilla extract
Instructions
- Preheat oven to 300 degrees.
- Combine melted butter or margarine and graham cracker crumbs in a small bowl with a fork. Pat firmly on the bottom of a nine-inch springform pan.
- In large mixer bowl, or in Cuisinart, beat cream cheese until fluffy. Add condensed milk, beat until smooth.
- Microwave chocolate chips about two minutes, then stir until smooth. Fold into cream cheese mixture.
- Add remaining ingredients and mix well.
- Pour chocolate mixture into prepared pan.
- Bake 65 minutes. Placing a pan of water in the oven will help prevent cracking of the cheesecake while baking.
- Cheesecake will spring back when lightly touched when baking is finished. You may need to allow five or ten minutes of additional baking time.
- Cool to room temperature.
- Chill. Remove side of pan. Garnish as desired.
- Refrigerate leftovers.

I have successfully substituted low fat cream cheese and/or sweetened condensed milk in this recipe.
