    Peanutbutter Pie

    From FOR GOODNESS TASTE, under the title of Par Excellence, The Junior League of Rochester, Inc., Rochester, N.Y.


    List of Ingredients


    • 1 cup graham cracker crumbs
    • 1/4 cup packed brown sugar
    • 6 tbsp. butter, melted
    • 2 8-ounce packages cream cheese, softened
    • 2 cups sugar
    • 2 tsp. vanilla extract
    • 2 cups creamy peanutbutter
    • 1 1/2 cups heavy cram, whipped
    • 1 cup unsalted dry roasted peanuts, chopped
    • 4 ozs. semi-sweet chocolate
    • 3 tbsp. plus 2 tsp. hot coffee


    Instructions


    1. In a medium bowl, combine graham-cracker crumbs, brown sugar and 4 tbsp. melted butter. Press mixture onto bottom of 9" by 3" springform pan.
    2. In a large bowl, beat cream chese, sugar, vanilla extract and remaining 2 tbsp. melted butter until smooth. Gradually beat in peanutbutter until creamy.
    3. Fold whipped cream and peanuts into peanutbutter mixture. Spoon filling into crust. Refirgerate 6 hours.
    4. In microwave, heat chocolate and coffee for one minute. Stir until melted Spread over filling. Refrigerate until firm.


    Final Comments


    Makes 16 servings.
