    Raspberry Almond Bars

    List of Ingredients


    • 1/2 cup sugar
    • 1 cup all purpose flour
    • 3/4 cup oatmeal
    • 1/2 cup margerine, at room temperature
    • 1/2 teaspoon almond extract
    • 1/2 cup raspberry preserves


    Instructions


    1. Heat oven to 350 degrees.
    2. Line an 8 or 9-inch square baking pan with foil. Lightly grease foil.
    3. Mix flour, oats and sugar in a large bowl.
    4. Add butter and cut in with pastry blender or 2 knives until mixture resembles coarse crumbs. Stir in extract until blended.
    5. Reserve about 1 cup of oat mixture. Press remainder into bottom of pan evenly, adding more of mixture if needed. Spread preserves over top to about 1/2 inch from edges.
    6. Mix almonds with reserved oat mixture. Sprinkle evenly over preserves, then press down gently. (Some preserves will show through.)
    7. Bake 25-30 minutes or until edges are golden brown. cool in pan on rack.
    8. Lift foil by end to cutting board and cut in bars.
