    Florentine Crepe Cups

    Florentine Crepe Cups take a little time to make, but they are delicious. A chicken salad filling also works well in the crepe cups.


    List of Ingredients


    • 3 eggs, slightly beaten
    • 2/3 cup flour
    • 1 cup milk
    • 1 1/2 cups shredded cheddar cheese
    • 3 tablespoons flour
    • 3 eggs, slightly beaten
    • 2/3 cup mayonnaise
    • 10 oz. package chopped spinach, thawed and drained
    • 4 oz. can mushrooms, drained
    • 6 crisply cooked bacon slices, crumbled


    Instructions


    1. Combine eggs, flour and milk; beat until smooth. Let stand 30 minutes.
    2. For 12 crepes, pour 2 tablespoons batter into hot lightly greased 8" skillet. Cook on one side only, until underside is slightly browned.
    3. Toss cheese with flour, add remaining ingredients; mix well.
    4. Arrange crepes in greased muffin pan; fill with cheese mixture.
    5. Bake at 350 degrees, 40 minutes or until set. Garnish with bacon curls if desired.



    Final Comments
