Florentine Crepe Cups
Florentine Crepe Cups take a little time to make, but they are delicious. A chicken salad filling also works well in the crepe cups.
List of Ingredients
- 3 eggs, slightly beaten
- 2/3 cup flour
- 1 cup milk
- 1 1/2 cups shredded cheddar cheese
- 3 tablespoons flour
- 3 eggs, slightly beaten
- 2/3 cup mayonnaise
- 10 oz. package chopped spinach, thawed and drained
- 4 oz. can mushrooms, drained
- 6 crisply cooked bacon slices, crumbled
Instructions
- Combine eggs, flour and milk; beat until smooth. Let stand 30 minutes.
- For 12 crepes, pour 2 tablespoons batter into hot lightly greased 8" skillet. Cook on one side only, until underside is slightly browned.
- Toss cheese with flour, add remaining ingredients; mix well.
- Arrange crepes in greased muffin pan; fill with cheese mixture.
- Bake at 350 degrees, 40 minutes or until set. Garnish with bacon curls if desired.
