    Merlot Pot Roast

    List of Ingredients




    3-3 1/2 pound boned beef chuck roast
    fresh ground pepper
    1 tablespoon butter or olive oil
    3 carrots, rinsed and peeled
    2 cups mushrooms, cleaned and sliced
    3 cloves garlic, minced
    1 dried bay leaf
    1 cup merlot
    6 ounces tomato paste
    1 cup water

    Rinse beef, pat dry and sprinkle generously with fresh-ground pepper. Melt butter in a large frying pan over high heat. Whenhot, add beef and brown well on all sides, cooking for about eight minutes total.

    Cut the carrots into sticks, about 2 inches long.

    In a large electric crockpot, combine carrots, garlic, bay leaf and mushrooms. Set beef on vegetables; add drippings.

    In a small bowl, mix merlot wine, water and tomato paste; pour over meat and vegetables.

    Cover and cook until beef is very tender when pierced, approximately 8-9 hours. If possible, turn meat over halfway through cooking.
