Couscous and Apricot Salad

List of Ingredients
- 2 cups orange juice
- 1/2 cup water
- 1 teaspoon salt
- 10 ounces couscous
- 1/2 cup dried apricots
- 1/2 cup currents
- 2 tablespoons raspberry/red wine vinegar
- 1 cup, chopped/seeded cucumber
- 1/2 cup chopped green onion
- 1/2 cup pistachio nuts
- 1/4 cup chopped fresh mint
- 1/4 cup lemon juice
- 2 tablespoons olive oil
Instructions
- In a saucepan, combine 1 1/2 cups orange juice and 1/2 cup water. Bring to a boil. Stir in couscous. Remove from heat. Stir couscous and let stand for five minutes. Fluff and place couscous in large bowl.
- Combine 1/2 cup orange juice with vinegar. Add dried apricots and currents. Bring to a boil. Let stand for 15 minutes. Discard cooking liquid.
- Add all remaining ingredients to salad. Mix and toss.
