    Thai-Style Black Bean Salad

    Recipe Introduction


    This is a great salad for a potluck.


    List of Ingredients


    • 1 15 oz. can black beans, drained
    • 1 cup cooked, canned corn kernels
    • 1/2 cup diced celery
    • 1/2 cup diced onion
    • 1/2 cup diced red bell pepper
    • 1/4 cup fresh cilantro leaves
    • 2 cloves garlic, minced
    • 1 tbsp. fresh minced ginger
    • 3 tbsp. sesame oil
    • 2 tbsp. rice wine vinegar
    • 1 tbsp. fresh squeezed lime juice
    • lettuce leaves, optional
    • lime slices, optional
    • red bell pepper rings, optional


    Instructions


    1. In a large bowl, combine black beans, corn, celery, onion, bell pepper, cilantro, garlic and ginger.

    2. In a small bowl, whisk sesame oil with vinegar and lime juice; pour over bea mixture and toss to combine. Season to taste with salt, if desired. Chill until ready to serve.



    Final Comments


    If divided into 4 servings as a main dish, there are 210 calories.

    If you want "hot", you may add 1-2 jalapeno chilies, stemmed, seeded and minced.
