    Recipe Introduction


    Superb flavor depends upon the freshest and best ingredients. Use the oil of your choice, singly or in combination, such as one-fourth cup olive oil and one cup vegetable oil.


    List of Ingredients


    • 1 large whole egg
    • 1 tablespoon fresh lemon juice or wine vinegar
    • 1 tablespoon mustard, preferably Dijon
    • dash of salt
    • 1 1/4 cups light olive oil, vegetable oil or peanut oil


    Instructions


    1. With metal blade in place, process egg, lemon juice or vinegar, mustard, salt and 1 tablespoon oil for 60-seconds. Pour 1/4 cup oil into the pusher. When it has dribbled through the small hole at the bottom of the pusher, remove the pusher from the feed tube and gradually add the remaining oil. Recipe may be doubled, but do not add more that 1/4 cup oil in the pusher, or it will dribble through too quickly. Taste and adjust the seasoning. Cover and refrigerate. For a stiffer mayonnaise, 2 egg yolks may be used instead of 1 egg.
    2. Makes about 1 1/2 cups.
