List of Ingredients
- 3 cups of all purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon of salt
- 3/4 cup of soften butter
- 3/4 cup of granulated sugar
- 2 eggs
- 1 teaspoon almond extract
- 1 teaspoon orange zest
- 1/2 cup blanched chopped almonds toasted (350 for 5 to 10 min)
- 1 cup finely chopped dried apricots
Instructions
- Preheat oven to 325.. Ungreased cookie sheet
- in bowl mix flour, baking powder, and salt
- In another bowl, beat butter and sugar until smooth and creamy. Add eggs one at a time, beat until well incorporated. Stir in almond extract and orange zest. Add almonds and apricots and mix well.
- Gradually add flour mixture, mixing until a dough forms. OIn a lightly flour surface, divide dough in half, shape into two rolls about 8 inches long. Place at least two inches apart on cookie sheet. Bake in preheated oven for 30 to 35 minutes until golden brown. Cook for 5 minutes on cookie sheet, then cut into slices, 1/2 inch thick. Place on cookie sheet and return to oven to dry for 15 minutes, turn slices over and bake for 5 minutes more. Immediately transfer to wire rack for cooling
