Rice Pudding

List of Ingredients
- 2 quarts of milk
- 1/2 quart of water
- 1/2 pound of sugar
- 1/4 pound of butter
- 1/2 pound of Carolina long grain rice
- 1 pint of light cream
- 5 eggs well beaten
- 2 tablespoons of sugar
- 2 tablespoons of vanilla
- 1 egg (if needed to thicken)
- cinnamon
Instructions
- Bring to a boil: 2 qts milk, 1/2 qt of water, 1/2 lb of sugar, 1/4 lb of butter
- Add 1/2 lb of Carolina long grain rice and simmer for 1 hour stirring often when it starts to boil cut heat down so it just simmers, continue to stir
- After it has cooked for an hour and rice is done, add 1 pint of light cream
- Add 5 well beaten eggs, add 2 tablespoons sugar and 2 tablespoons vanilla to eggs and mix, add slowly to rice so they don't curdle, stirring continuously cook until thickened. If too thin for you, addd 1 more egg
- Remove from stove, top with cinnamon
