    List of Ingredients


    • 1/3 cup chopped onions
    • 1/2 cup chopped celery
    • 1/2 cup chopped carrots
    • 2 1/2 tablespoons butter
    • 1 cup dried lentils
    • 1/2 cup barley
    • 1/16 teaspoon rosemary
    • 1 teaspoon salt
    • 1 teaspoon ground cumin
    • 5 cups water or stock
    • 1 box of vegatable broth cubes (2 cubes)


    Instructions


    1. In a large pot, saute the chopped onions, celery, and carrots in the butter. Add the water or stock, lentils,barley rosemary, salt and cumin. Brin to a boil, turn down the heat and cook until the lentils and barley are tender, about 1 hour. Remove scum as it forms, if desired.


    Final Comments


    Cathy uses Cenovis Vegetable broth cubes, (made in Switzerland)
