Barley Stew with Lentils

List of Ingredients
- 1/3 cup chopped onions
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
- 2 1/2 tablespoons butter
- 1 cup dried lentils
- 1/2 cup barley
- 1/16 teaspoon rosemary
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 5 cups water or stock
- 1 box of vegatable broth cubes (2 cubes)
Instructions
- In a large pot, saute the chopped onions, celery, and carrots in the butter. Add the water or stock, lentils,barley rosemary, salt and cumin. Brin to a boil, turn down the heat and cook until the lentils and barley are tender, about 1 hour. Remove scum as it forms, if desired.
