    I always include one or to zucchini plants in my garden each summer. They seem to grow in both abundance and size, giving me the pleasure of baking enough zucchini bread to freeze for winter!

    List of Ingredients




    3 large eggs
    1 1/2 cup of sugar
    1 cup canola oil
    2 teaspoons of vanilla extract
    3 cups of flour
    2 teaspoons of cinnamon
    1 teaspoon of baking soda
    1/2 teaspoon of baking powder
    2 cups shredded zucchini
    1 cup of chocolate chips (optional)

    Recipe



    Preheat oven to 350 degrees and grease or spray Two loaf pans. In a large bowl add the eggs, sugar, oil and vanilla and mix lightly. Next add the dry ingredients and mix well. Stir in the zucchini and chocolate chips (if using)until all is combined. Pour the batter evenly into each loaf pan. Bake in 350 degree oven for 45 to 55 minutes (toothpick inserted into the center should come out clean) Remove from oven and cool for about 10 minutes before removing from pans. Place loaves on wire rack and let cool completely before serving. Enjoy!
