    A moist chewy coconut cookie. Great if you like coconut!

    List of Ingredients




    2 eggs
    3/4 cup sugar
    1/3 cup flour
    1/4 tsp. baking powder
    1/8 tsp. salt
    1 Tbsp. butter melted & cooled
    1 tsp. vanilla
    2 2/3 cups flaked coconut

    Recipe



    Beat eggs until foamy. Slowly add sugar, beat till well blended. Fold in flour, baking powder and salt. Add butter, vanilla and coconut. Drop by teaspoonfuls onto greased and floured cookie sheet. Bake in 325 degree oven for 15 minutes. Cool a few minutes before removing from cookie sheet.
