Pina Colada Muffins

Great for a tea party, special occasion, brunch and dessert.
List of Ingredients
4 oz. flaked coconut
2 cups flour
1/2 cup sugar
1 Tbsp. baking powder
1 tsp. salt
1/3 cup crushed pineapple ( in its own juice)
2 eggs
3/4 cup fat free milk
1/4 cup oil
4 Tbsp. melted butter
1 tsp. vanilla extract
Recipe
Heat oven to 350 degrees. Sprinkle the coconut on a cookie sheet and toast till golden brown ( about 8 minutes) stirring frequently. Sift together all the dry ingredients. Blend in the eggs, milk, oil, butter and vanilla. Fold in the coconut and the pineapple. Spoon into lined muffin pan and bake for approximately 30 minutes. I use a 12 unit muffin pan. Enjoy!
