    Coconut Shrimp

    I would start off with a bowl of clam chowder. Following the chowder, I would serve this dish with a side of steamed rice and a garden salad. I have also served the coconut shrimp as an appetizer as well.

    List of Ingredients




    1 lb. of medium shrimp, cleaned, deveined and tails removed.
    1/4 cup of lemon juice
    2 cups of bisquick or your favorite pancake mix
    1 egg
    1 1/3 cups of milk
    1 cup shredded coconut
    canola oil for frying

    Recipe



    Clean and butterfly the shrimp. Marinate the shrimp in lemon juice at least 1 hour. Add together the bisqucik, egg and milk and mix well. Dip each piece of shrimp into the batter, then coat with the shredded coconut. Fry in canola oil till golden brown
