This recipe was given to me by one of my Amish friends. They serve it along with their home baked gingerbread cakes and cookies. It's easy & so delicious!
List of Ingredients
1 cup sugar
1 cup lemon juice
3 eggs
3 Tbsp. butterRecipe
In a large saucepan add the sugar and lemon juice. Cook over low heat, using a wisk to mix. Add the eggs right away. Do Not let your sugar and lemon juice get too hot or else the eggs will curdle. Wisk after adding each egg. Add the butter and continue to mix with the wisk until the mixture is thick. When the lemon curd has thickened, remove from heat. Let cool till warm, then pour into pint size jar and cover tightly. Enjoy!
