    This is a great recipe for any time of year and occasion!

    List of Ingredients




    35 oz. can tomatoes with basil
    2 lbs. chicken cutlets
    1 lb. sweet italian sausage
    1/2 cup sliced pepperoni
    1 can mushrooms
    2 medium onions, chopped
    2 cloves garlic
    1 slice of mozzarella for each cutlet
    salt & pepper to taste
    1 tsp. oregano
    4 Tbsp. olive oil
    Bread Crumbs for coating

    Place tomatoes in bowl with juice and cut tomatoes into chunks. Cut slits into each garlic clove. Pour olive oil in frying pan, add sausage & fry. Next add the mushrooms, onions, pepperoni & garlic. Stir & continue to cook till the onions are clear. REMOVE the garllic. Pour the tomatoes & juice into the frying pan. Add salt & pepper to taste. Add oregano and stir. Cover pan, remove from heat and place pan in 350 degree oven and cook for 30 minutes. While that is cooking, bread and fry your chicken cutlets. Remove the pan from the oven. Uncover and place the cooked cutlets on top of the sauce. DO NOT STIR OR MIX. Cover the frying pan again and simmer for 15 minutes more. Remove the pan from the heat. Uncover & top with slices of Mozzarella. Cover pan again & let the cheese melt!!! ENJOY!!!
