    This is one of those dishes that was served during the days of meatless Fridays and during Lent. I like to serve along with a good crispy Italian Bread on the side.

    List of Ingredients




    16 oz. box of elbow macaroni
    2 Tbsp. olive oil 4 cloves garlic, grated
    15 oz. can stewed tomatoes
    15 oz. can garbanzo beans, undrained
    15 oz. can kidney beans, undrained
    1/4 tsp. basil
    1/4 tsp. oregano
    2 Tbsp. parsley
    grated peccorino romano cheese to sprinkle on top

    Recipe



    Cook elbow macaroni, drain & set aside. In a large saucepan add 2 Tbsp. olive oil, grated garlic, stewed tomatoes, basil, oregano & parsley. Cook to boil then lower to simmer. Add both cans of UNDRAINED beans. Continue to simmer for about 8 minutes. Remove from stove and add to the drained elbows. Mix well then ladddle into individual bowls. Serve with grated peccorino sprinkled on top.
