    A great dish anytime of year! The following recipe serves about 4 people. If serving a larger crowd then I would double the recipe.

    List of Ingredients




    1 lb. bucatini pasta
    1 Tbsp. extra virgin olive oil plus a little for drizzling
    6 slices canadian bacon, chopped
    2 leeks, halved lengthwise, sliced, washed & dried
    4 cloves grated garlic
    1 jalapeno pepper, remove seeds and finely chop
    2 pints of cherry tomatoes
    1/2 cup white wine
    Black pepper
    2 Tbsp. dried parsley
    1/2 cup fresh basil , chopped
    grated pecorino
    1 cup of pasta water ( water you cooked the pasta in)

    Cook the bucatini pasta according to the package directions.
    In a deep skillet heat a drizzle of the olive oil, add the bacon and cook till crisp. Remove & reserve. To the pan drippings, add the sliced leeks, garlic, jalapeno pepper, and saute for about 2 minutes. Next add the cherry tomatoes and stir to combine. Cover pan and cook tomatoes till they begin to burst. This may take about 8 minutes or so. Uncover the pan and mash the tomatoes, add the wine and stir for about 2 minutes. Season with the peper to your taste and lower heat.

    When pasta is ready, add a ladle of the pasta water to the sauce along with the parsley, bacon & pasta. Toss till all ingredients adding a little more olive oil and mix untill all are nicely combined. Turn off heat, remove from stove and toss in the basil and grated pecorino. Serve & Enjoy!
