    Beer Battered Coconut Chicken

    If you want something different try my coconut chicken. The kids love it! I like to serve this dish with sweet potato fries.

    List of Ingredients




    1 lb. of boneless chicken breasts cut into strips
    1/4 cup of lemon juice
    2 cups of bisquick or pancake mix
    beer
    1 egg
    shredded coconut
    canola oil for frying

    Recipe



    Marinate the chicken strips in lemon juice for a minimum of 1 hour. Mix together the bisquick mix, egg and enough beer to make a batter thick enough to coat the chicken. Dip strips into batter then coconut. Fry in canola oil. Fry till golden brown. Drain on paper towels. I serve along with a seperate bowl of sweet and sour sauce and fresly sliced pineapple on the side.
