    A Family favorite! I like serving this over a bed of steamed brown rice.

    List of Ingredients




    2 Tbsp. butter
    2 Tbsp. olive oil
    1 cup of white flour
    1 tsp. paprika
    1/4 tsp. black pepper
    1/4 cup dry sherry
    8 boneless skinless chicken breasts
    20 oz. can of pineapple chunks in heavy syrup
    1 can of sliced peaches in syrup
    2 green onions sliced
    1 Tbsp. brown sugar
    1/2 cup sliced green peppers

    Preheat oven to 425 degrees. Put butter & olive oil in 13x9 baking dish and place in oven till melted. Remove pan. Combine flour, paprika & pepper in a large zip lock bag. Place 2 chicken breasts in a bag at a time & shake to cover with flour mixture. Arrange the floured chicken pieces in the baking pan over the melted butter & oil in a single layer. Bake at 425 degrees for 20 mins. Turn chicken. In a seperate bowl, mix the pineapples, peaches, green peppers, onions, brown sugar & sherry. Pour this mixture over the chicken. Lower the oven to 375 & bake about 45 mins. Chicken should be golden brown & sauce thick.
