    ORZO SALAD

    This is a great side to any meal. I love serving this in place of my macaroni or potato salads at picnics, bbq's and family events. Good for a change!

    List of Ingredients




    1 lb. orzo
    2 cucumbers, peeled, seeded & diced
    1/2 cup fresh chopped basil
    4 celery stalks, diced
    1 red pepper, seeded and chopped
    1 cup of cherry tomatoes, halved
    2 Tbsp. chopped fresh dill
    1/2 cup olive oil
    2 Tbsp. Dijon mustard
    Juice of 2 lemons
    salt & pepper to taste

    Recipe



    Cook the orzo in boiling water. Drain, rinse and set aside. In a salad bowl, combine the next six ingredients. Add the orzo and mix again. Combine the mustard and olive oil, whisking until blended. Add the lemon juice, salt & pepper and mix well. Pour over the salad and mix well. Enjoy!!
