    This is a meal all in itself. For a change, you can make a hot sandwich by placing the slices on freshly baked Italian Bread.

    List of Ingredients




    I large purple egg plant
    approximately 3 to 4 eggs, beaten
    Bread crumbs, enough for breading each slice
    extra virgin olive oil for frying
    flour
    mozzarella, shredded or sliced
    your favorite pasta or tomato sauce

    Recipe



    You can either peel or not peel your egg plant. Whatever your preference. Wash and dry your eggplant. Cut off both ends and discard. Slice the rest of the egg plant into thin slices. Dredge each slice into flour, followed by beaten egg and then in bread crumbs. Pour enough extra virgin olive for frying into pan and heat. Fry all slices on both sides till golden brown. Place cooked egg plant slices into baking pan. Cover with sauce and top with shredded or sliced mozzarella. Bake in 350 degree oven until cheese is melted.
