Recipe Introduction
Years ago we were obliged to comply with meatless Fridays. Aunt Anna would often serve this dish accompanied with slices of freshly baked garlic bread.
List of Ingredients
2 heads Escarole
olive oil
garlic
2 cups water
1 can Catellini BeansRecipe
Wash & dry escarole. Cut the escarole into small pieces. In a large saute pan heat oil and garlic. Add the escarole pieces and 2 cups of water. Cook till soft. Add the can of catellini beans and stir in well. Cook for 1 minute more and remove from heat. Serve in individual bowls. I like to sprinkle a little grated romano cheese on top.
