    Marshmallow Topped Yams

    Just a simple recipe I put together one Thanksgiving. It turned out to be a big hit!

    List of Ingredients




    6 large yams
    2 Tablespoons milk
    1/2 stick butter
    1 teaspoon cinnamon
    1/4 teaspoon nutmeg
    one 10 oz. bag of marshmallows
    1/4 cup brown sugar

    Recipe



    Preheat oven to 325 degrees. Cook the yams whole in boiling water until tender. Drain & rinse in cool water. Peel the yams when cool enough to handle. Cut the yams into thirds and place in food processor with the milk, butter and spices. Puree until smooth. Spray a 2 qt. casserole dish with cooking spray. Place the mashed yams into the casserole dish. Mix in the brown sugar well. Top with the marshmallows ( I use the miniature ones). Make sure there is about an inch of space at the top of your dish so that the marshmallows don't overflow during baking. Bake until the topping is golden and puffed. About 30 to 40 minutes.
    **Note: You can also beat the yams using an electric mixer instead of pureeing a food processor)
