Hot Apple Slaw

Recipe Introduction
This dish is perfect alonside meats or poultry. Granny smiths are best, but can use jonathans or baldwins. Best hot out of skillet, but can serve room temperature or slightly chilled.
List of Ingredients
- 2 tsp unsalted butter
- 2 tsp canola oil
- 1 medium onion, very thinly sliced
- 1 small red cabbage, very thinly sliced (about 5 cups)
- 1/2 tsp salt
- 2 medium tart apples, sliced into sedges
- 1 TBSP slivered fresh sage, or 1 tsp crumbled dried
- 1 TBSP cider vinegar
- 1 TBSP Dijon mustard
Instructions
- Heat a large nonstick skillet over medium-high heat; add the butter and oil. When the butter melts, add the onion; saute until soft, about 5 minutes.
- Add the cabbage and salt; cook, stirring occasionally, until cabbage is tender, 6-8 minutes. Stor in the apples,sage,vinegar, and mustard; continue cooking, stirring gently,until apples are just tender ( they'll be slightly pink), about 5 minutes
Final Comments
Try serving the slaw on pumpernickel bread with some lean corned beef and a sprinkle of shredded reduced-fat swiss cheese; toast to make a fabulous open-faced Reuben sandwich.
