Kashi Stuffed Portabello Mushrooms

Recipe Introduction
Makes about 4 servings. Preheat oven to 350 degrees
List of Ingredients
- 1 cup cooked kashi pilaf.
- 4 portabello mushroom stems chopped
- 1 clove garlic, minced
- 1 samll can artichoke hearts, chopped
- 2 TBsp seasoned breadcrumbs
- 1 tsp olive oil
- 2 Tbsp walnuts, chopped
- 4 portabello mushroom caps
Instructions
- Cook Kashi pilaf according to directions on package.
- In a medium bowl, mix mushroom stems, garlic, artichoke hearts, breadcrumbs,olive oil, and walnuts with the kashi.
- Fill each cap with one-fourth of the mixture.
- Bake for 20 minutes at 350 degrees, then broil for 3 minutes to brown
