    Kashi Stuffed Portabello Mushrooms

    Makes about 4 servings. Preheat oven to 350 degrees


    List of Ingredients


    • 1 cup cooked kashi pilaf.
    • 4 portabello mushroom stems chopped
    • 1 clove garlic, minced
    • 1 samll can artichoke hearts, chopped
    • 2 TBsp seasoned breadcrumbs
    • 1 tsp olive oil
    • 2 Tbsp walnuts, chopped
    • 4 portabello mushroom caps


    Instructions


    1. Cook Kashi pilaf according to directions on package.
    2. In a medium bowl, mix mushroom stems, garlic, artichoke hearts, breadcrumbs,olive oil, and walnuts with the kashi.
    3. Fill each cap with one-fourth of the mixture.
    4. Bake for 20 minutes at 350 degrees, then broil for 3 minutes to brown
