    A few years ago we lived on acres in the middle of Macadamia country on the Far North Coast of NSW Australia. Our neighbour had a Macadamia Plantation and gave me this yummy biscuit. I found it was better to roast the nuts before putting them into the biscuits but this is not necessary. You could also replace the nuts with any other sort.


    List of Ingredients


    • 2 cups plain flour
    • pinch salt
    • 250 grams margerine/butter
    • 2/3 rds cup castor sugar
    • 1 teaspoon vanilla essence
    • 2 cups crushed macadamia nuts


    Instructions


    1. Cream margerine and sugar.
    2. Add vanilla.
    3. Sift flour and salt together.
    4. Add flour and nuts to margerine mix.
    5. Roll into small balls and roll in coconut.
    6. Place on greased baking slide. Press lightly with fork.
    7. Bake until golden brown in moderate oven 180 degress Celcius
