PINEAPPLE CANDY
3 C. sugar
1 C. crushed pineapple with juice
24 marshmallows
Pinch of salt
1 tsp. vanilla extract
2 C. broken pecans
Boil sugar with pineapple until it forms a hard ball in water (235ºF).
Remove from heat and beat well. Add marshmallows, salt and vanilla extract and beat until cool. Stir in nuts. Drop by teaspoons onto wax paper. Makes 4 to 5 dozen.
