    Cheddar Pecan Crisps

    1 stick unslated butter, softened
    8 oz grated cheddar cheese (I buy the packaged grated cheddar and
    jack cheese)
    1 large egg
    1/2 tea salt
    1/2 tea cayenne
    1/2 cup soy flour
    2/3 to 1 cup finely chopped pecans

    Beat the butter and cheese with mixer. Add the rest of the
    ingredients. Chill for about 15 min. in refrig. Third the
    mixture and roll 1/3 of it at a time into a 1 1/2" round log.
    Slice and bake on ungreased cookie sheet for about 15 to 18
    minutes.

    Yeilds around 50 crackers. Very easy and VERY good. I figured
    around 0.6 carb per cracker.
