Low-carb Sausage Balls
1 lb. Sausage, fried, drained of as much grease as possible, broken up
8-10 oz. Grated cheddar
3 c. Atkins Bake Mix
½ c. seltzer
½ c. cream or half-and-half
2 eggs
Mix first three ingredients in large bowl and last 2 in small bowl. Add
liquid ingredients to dry and mix with wooden spoon. Add more cream or
half-and-half to get a decent consistency - it took me almost another ½ c.of
cream the last time I made them - without making dough sticky. You will
probably have to mush it up with your hands to fully incorporate the dry
ingredients.
Roll into balls and bake on greased cookie sheet at 350 for about 25 minutes
or until they begin to get slightly brown. What you don't use immediately,
pop into a freezer bag and freeze!
