BRUNCH CASSEROLE
Serves 6
1 pound lean ground beef
½ pound ground breakfast sausage
1 onion, chopped
2 T butter
2 cloves garlic, minced
1 can sliced mushrooms
1 t salt, or to taste
1 package (10oz) frozen spinach thawed and squeezed dry
6 eggs, beaten
½ cup cream, scalded
½ cup shredded cheddar cheese
In a skillet, lightly brown meats and onion in butter;
drain excess fat and
place meat mixture in a well-greased crock pot.
Stir in garlic, mushrooms, salt, spinach, .
Beat eggs and cream together; pour over meat mixture.
Stir well, cover and cook on low for 7 to 9 hours, or until firm.
Sprinkle with shredded cheese 5 minutes before serving.
