Easy Chicken Fajitas

I love fajitas, but many ready-made seasoning mixes have added sugars. My Somersize Salsa Dip Mix is so versatile. Here’s a yummy, fast and easy way to make chicken taste great. Get your sombrero.
2 boneless, skinless chicken breasts
1 package Somersize Salsa Dip Mix
2 tablespoons vegetable oil
1 onion, sliced ½” thick
2 green peppers (or your favorite color), sliced ½” thick
½ cup shredded jack cheese
½ cup salsa
½ cup sour cream
4 iceberg lettuce cups
Slice the chicken breasts into long strips, about ½” thick. Place chicken in a bowl and sprinkle the dip mix to coat the chicken. Set aside.
Heat a heavy skillet over medium high heat. Add 1 tablespoon of the oil, onion and peppers and sauté for 10-15 minutes until onions and peppers begin to caramelize. Remove from pan and set aside.
In the same pan, add a bit more oil, then the chicken strips. Sauté on medium high until cooked through, about 5-6 minutes. Add the peppers and onions back to pan until all are heated through.
Serve fajitas in lettuce cups and garnish with jack cheese, salsa and a dollop of sour cream.
