Somersize Pinwheel Sandwiches

Everyone always asks, “What can I bring for lunch?” Here’s a great suggestion for lunch; a whole wheat tortilla wrap made with my Somersize Roasted Pepper Dip Mix, fat-free cream cheese and your favorite vegetables. Or slice into pinwheels for a more special presentation.
1 package (8 oz.) fat-free cream cheese, softened
1 package Somersize Roasted Pepper Dip Mix
4 whole wheat, fat-free tortillas
1 red pepper, thinly sliced
1 cucumber, thinly sliced
4 red leaf lettuce leaves
Place the cream cheese and dip mix in a bowl and stir to combine. Place the tortillas on a flat surface and spread with a generous amount of the cream cheese mixture. Layer with sliced peppers and cucumbers, then top with a lettuce leaf.
Roll each tortilla from one side to the other. Serve as a wrap, or slice across the rolled tortilla to create 1” pinwheels. Fan pinwheels on a platter and serve.
