Asparagus Casserole

1 lb. cooked, drained asparagus spears
3 egg whites
1/2 teaspoon salt
1/2 cup mayonnaise
1 tablespoon Dijon style mustard
1/2 teaspoon dried tarragon leaves, crushed
1/4 teaspoon ground black pepper
1/2 cup (2 oz) shredded sharp cheddar cheese
Preheat broiler. Place asparagus in a 12x8 inch baking dish. Beat egg whites and salt until stiff peaks form. Gently fold in mayonnaise, mustard, seasonings and cheese. Spoon over asparagus. Broil 5 to 6 minutes or until lightly browned. Makes 6 servings.
