    CREAMY BANANA PIE

    Do not prepared the topping for this pie too soon before serving, or the banana slice will discolor.

    List of Ingredients




    21/4cups ginger cookies, finely crushed
    5Tbsp butter or margarine melted.
    1/2Tsp grated nutmeg or ground cinnamon.
    1ripe banana, mashed.
    11/2cups cream cheese at room temperature.
    Generous 3Tbsp thick plain yogurt or sour cream.
    3Tbsp dark rum or 1Tsp vanilla extract.

    FOR TOPPING
    1cup whipping cream
    3-4bananas.

    Recipe



    1.Prepared oven to 350F. For the crust, combine the crushed cookies, butter or margarine and spice. Mix thoroughly with a wooden spoon.
    2.Press the biscuit mixture into a 9-inch pie dish, building up thick sides with a neat edge. Bake for 5min, then let cool.
    3.Beat the mashed bananas with the cream cheese. Fold in the yogurt or sour cream and rum or vanilla. Spread the filling in the biscuit case. Chill for least 4hours or preferably over night.
    4.For the topping, whit the cream until soft peaks form.
    5.Spread on the pie filling. Slice the bananas and arrange on top in a decorative pattern.
