1/2 cup sour cream
1/2cup low fat plain yogurt
3Tbsp Dijon-style mustard
1Tbsp fresh dill, snipped salt and pepper
11/2pounds new potatoes cut into 1/4inch thick slices
10 ounces fresh spinach, chopped
SALMON
4salmon fillet (4ounces each)
4Tsp Dijon-style mustard
1/8Tsp salt
Pinch black pepper
1Tsp chopped fresh dill
1Tsp olive oil

½ cup sour cream
1/2cup low fat plain yogurt
3Tbsp Dijon-style mustard
1Tbsp fresh dill, snipped salt and pepper
11/2pounds new potatoes cut into 1/4inch thick slices
10 ounces fresh spinach, chopped
1. Prepare salad: Stir sour cream, yogurt, mustard, dill, salt, pepper in large bowl. Cook potatoes in pot of water 10min. Add spinach. Cook 2min, until potatoes are tender. Drain. Add to bowl; fold into dressing
2. Meanwhile, prepare salmon: Prepare grill or heat broiler. Spread each fillet with 1Tsp mustard. Sprinkle evenly with the salt, pepper and dill. Drizzle over fillet
3. Grill or broil salmon 4 to 6 inches from heat for 8 to 10min or until cooked through. Remove from heat; let stand 5min, serve with dill potatoes.
