GERMAN STILE MACAROMI AND CHEESE
INGRIDIENTS
8 ounces elbow macaroni
* Boiling salted water
*About 12 ounces (3/4 lb) garlic sausage or kielbasa (polish sausage), thinly sliced
4 Tbsp butter or margarine
2 large onion chopped
1/4cup all-purpose flour
2cups milk
4 Tsp German-style or other spicy mustard
3/4Tsp salt
1/4Tsp white pepper (it has to be white)
3cups (12oz) shredded Swiss cheese
Recipe
1. Following package directions, cook macaroni in boiling salted water until dente; then drain thoroughly
2. In a wide frying pan over medium heat, brown sausage slices in 1Tbsp of the butter. Remove sausage from pan and set aside
3. Add the remaining 3 Tbsp butter and onions to pan and cook, stirring, until onions are soft. Stir in flour and cook until bubbly, remove pan from heat and stir in milk. Return to heat and stirring, cook until sauce is smooth and thickened. Remove from heat stir in mustard, salt, pepper, and macaroni; stir until well coated
4. Place half of the macaroni mixture in a buttered shallow 2 ½ to 3-quart baking dish. Distribute half the sausage, then half the cheese on top. Then layer on remaining macaroni mixture, then sausage, and the cheese. If made ahead, let cool, cover and refrigerate.
5. Bake uncovered, in a 400 oven from 25 to 35min or until cheese is bubbly and center is hot. Makes 6 to 8 servings.
