    GRLIC POTATO WITH GARLIC

    List of Ingredients

    GRLIC POTATO WITH GARLIC
    4 servings

    1 pound small red new potatoes, scrubbed
    4 large cloves garlic, unpeeled
    4Tbsp olive oil
    1/2Tsp salt
    4sprigs fresh rosemary
    1Tbsp white wine vinegar
    2Tsp Dijon mustard
    1/4Tsp pepper
    2green onions, thinly sliced


    Recipe


    1. Prepare grill or heat oven to 450. Make a tray from heavy-duty aluminum foil by foiling foil over double strength and folding up sides; oil tray
    2. Cut potatoes into pieces no larger then 1 ½ inches. Combine the potatoes, garlic, 1Tbsp oil and ¼ Tsp salt in medium-size bowl; toss to coat potatoes. Spoon potato mixture into foil tray, keeping potatoes in one layer. Top with rosemary springs.
    3. TO GRILL: Grill the potato mixture 5 inch above medium-hot coals, covered, turning occasionally, for 25 to 30 min or until potatoes are tender and crisply browned
    4. TO ROAST: Roast potato mixture in 13+9+2-inch baking pan in 450 oven, stirring occasionally, 30 to 40 min or until tender and browned
    5. Meanwhile, whisk vinegar, mustard, remaining ¼ Tsp salt and the pepper in medium-size bowl.
    6. Wisk in remaining 3 Tbsp oil. Discard woody rosemary stems from grilling tray. Squeeze garlic cloves from skins into dressing.
    7. Add potatoes and onions to dressing; Toss coat. Serve warm.
