BANANA FRITTERS
List of Ingredients
1 1/4 cups sifted flour
1/2 cup sugar
1 1/4 tsp salt
2 tsp baking powder
1 egg, beaten
1/3 cup milk
2 tsp melted shortening
4 medium bananas
Recipe
Sift 1 cup flour w/sugar, salt & baking powder. Mix egg & milk & add to flour mixture gradually, stirring until smooth. Add shortening. Peel bananas & cut crosswise into halves or quarters. Roll in remaining flour, then cover w/batter. Fry in hot deep fat (375°) 4-6 minutes. The batter is stiffer than for most fritters & requires longer cooking. Serves 8.
